Vinification The grapes, hand-harvested during the coolest hours of the day, are carefully selected, destemmed, and gently pressed. The resulting free-run must is left to settle before undergoing fermentation at a low temperature (16 °C) in stainless steel tanks. After the alcoholic fermentation — which can last up to a month — the wine matures for 6 months on its fine lees in steel tanks, and then rests in bottle for at least one month before being released to the market.
