| Vinification | The finest grapes are destemmed, crushed, and left to ferment for about ten days in small stainless steel tanks at a controlled temperature. Once fermentation is complete, the wine is racked and left to rest until malolactic fermentation has finished. After another racking, necessary to remove the lees and clarify the wine, it is allowed to rest in stainless steel tanks until bottling. Throughout every stage of production — from grape crushing to bottling — no sulfites or other external antioxidants are used to protect the wine. Therefore, each operation must be carried out with the utmost care and precision to preserve the quality of the final product. |
