Vinification A cold pre-fermentation maceration gently awakens the grapes, a soft, teasing introduction. Fermentation follows in stainless steel, in intimate contact with the skins for ten days — an intense tête-à-tête where the wine draws its colour, structure, and soul. Finally, 10% of the wine matures for 12 months in first- and second-passage barriques — an intimate stay in wood that rounds it out, deepens its charm, and reveals more sensual, refined nuances.
Commentaires Sight: a deep, impenetrable ruby red — a colour that draws you in and only reveals itself to those who take the time to truly look. Nose: ripe blackberry and sun-darkened cherry, wrapped in notes of pepper and clove — an intense, warm, almost hypnotic bouquet. Palate: its aromatic complexity is carried by a vigorous, pulsing tannin that asserts itself with confidence before slowly melting away, like a lingering caress. It evolves in the bottle for up to 15 years, unveiling each year a new facet — deeper, more seductive — a wine that knows how to wait, rewarding patience with an ever-growing sensuality.
